Wine Information
Clarevallis is a tribute to Saint Bernard, who founded the Clairveaux Abbey in 1115, about 13 kilometers from Urville. In 1152, Bernard had a vaulted cellar built, which today belongs to the Drappier family. It is a cuvée made from 75% Pinot Noir, with the remainder being Chardonnay, Pinot Meunier, and Blanc Vrai. Only the juice from each first pressing (cuvée) was used. Pressing was carried out mechanically at low pressure. The must flowed into the tanks by gravity. Natural clarification took place naturally. Fermentation in stainless steel tanks lasted about two weeks at low temperature. This was followed by natural and complete malolactic fermentation. No cold stabilization, no filtration, and minimal sulfur addition below 20 mg/l. Aging on the lees lasted about three years. The exact date of disgorgement is engraved on the bottle. The dosage is 4 grams.

Nose
The Cuvée Clarevallis opens with a complex and fragrant bouquet of apples, pears, and quinces, with hints of elderflower and verbena, as well as notes of grapefruit peel and light yeast autolysis. The most pronounced aromas are those of mirabelle plums and greengage, combined with herbal spice, almonds, and a hint of wax.
Taste
On the palate, the champagne is initially silky and sensual. The acidity is not as pronounced as in other champagnes from the house, but the minerality is all the more pronounced and brings plenty of energy to the Clarevallis. Here, too, juicy, ripe fruit notes are predominant in a powerful body, supported by a lively but well-integrated mousse. The finale is salty, umami and slightly phenolic.

The NV Extra-Brut Clarevallis evokes aromas of red berries, spring flowers, chalk, spices and crushed stones. Medium-bodied, tense and straight, it’s pure and crystalline, with a pinpoint mousse and a long, ethereal, refined phenolic finish enhanced by chalky dry extracts. This blend of 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay and 5% Blanc Vrai, sourced from the Kimmeridgian soils of Urville, was disgorged with a dosage of four grams per liter. A real success, it’s quite approachable now but will benefit from 4-5 years of additional aging in the cellar.

The NV Extra Brut Clarevallis, made from 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay and 5% Blanc Vrai (the local name for Pinot Blanc), references the Latin name of Clairvaux, because Drappier occupies the ancient cellars once constructed for that influential abbey. This wine is from organically farmed estate fruit only. The wine is golden in color, almost with a tinge of pink. The nose is vivid with juicy Mirabelle plum and ripe apples. The palate takes this fruit, backs it with yeasty brioche bun and white pepper and suffuses it with lively, youthful mousse.
