Information about the wine
This is a pure Pinot Noir, from which only the first pressing (cuvée) was used. Pressing was carried out mechanically at low pressure. The must flowed into the tanks by gravity. Fermentation took place in stainless steel tanks at low temperature for two weeks. This was followed by natural and complete malolactic fermentation. No cold stabilization, no filtration, and no sulfurization. Aging on the lees lasted approximately three years. The exact date of disgorgement is engraved on the bottle.

Nose
The aroma of this sulfur-free Brut Nature already demonstrates what generally characterizes sulfur-free wines. It presents itself open and inviting from the outset. Subtle, yeasty autolysis notes blend with notes of tart bitter orange zest, ripe, somewhat crumbly apples, pears, and quinces, a touch of wool wax, and nutty, almond-like notes.
Taste
On the palate, the champagne develops an impressive complexity and balance between fresh, juicy notes with clear, precise, and punchy acidity, as well as tertiary aromas and a touch of rock candy, although the “Brut Nature” lacks any measurable sweetness. The perlage is lively, yet delicate and well-integrated, the aromatics dense, and the champagne overall powerful and long.

Entirely crafted from Pinot Noir with no dosage, the NV Brut Nature Pinot Noir Zero Dosage Andre et Michel Sans Ajout de Souffre reveals a lively, fresh bouquet of red berries, lemon, citrus and herbs. Moderately weighted and tense, it’s incisive and pure, with a good core, elegant mousse and an ethereal, menthol-inflected finish.

The NV Brut Nature Pinot Noir Zero Dosage André et Michel Sans Ajout de Souffre is the same wine as the Brut Nature Pinot Noir Zero Dosage (although from different base vintages) vinified and aged with no sulfur. This is a relatively soft, caressing zero dosage Champagne with a relatively round, open core of candied, perfumed fruit. Tasting the two NV Brut Natures together it is hard to say with precision how much of the wines’ characters are due to the sulfur treatments versus the underlying vintages themselves.
