Information about the wine

This wine comes from the Mont de Milieu vineyard, which is not far from the appellation’s Grands Crus. Mont de Milieu was first mentioned in 1218 as “montmelliant” and later referred to as “mont de milieux.” The name translates as “middle mountain” because the border between the Duchy of Burgundy and Champagne lay exactly in the middle of the hill. This 1er Cru has a southerly exposure. The Bouchards own 0.75 hectares here on white clay and Kimmeridge limestone. The vines were planted in 1990 and, due to a virus, half were pulled out and replanted in 2016. After hand-picking, spontaneous fermentation followed and the wine was aged in four- to 12-year-old 500-liter tonneaux. The wine was coarsely filtered and lightly sulfurized.

Nose

The wood influence of the Chablis 1er Cru Mont de Milieu is immediately noticeable in the nose. It smells of pears tossed in butter, with hints of coconut, vanilla, and oak—but all in a tastefully balanced way, with citrus notes, lime, and oyster shells also blending in.

Palate

On the palate, the wine offers fullness and forms a counterpart to the much cooler Montmains. The Chablis has power and juiciness, creaminess, and luscious white-fleshed fruit, but also plenty of punchy acidity and good tension with a mouthwatering salinity in the finish.
