Thanks to the 1995 DOC Vin Santo del Chianti regulation, Il Passito from Corzano e Paterno can no longer be labeled Vin Santo because it falls below the minimum alcohol content of 13%. It is made from selected Trebbiano and Malvasia grapes, which are first hung whole in the “Vinsantaia” to dry. After about three months of aging, the shriveled grapes are reselected and gently pressed for 24 hours. After decanting for seven days, the must is placed on the mother lees in traditional “Caratelli” (50-100 liter wooden barrels). The barrels are sealed and aged in the well-ventilated “Vinsantaia” for 17 years without any intervention. Il Passito di Corzano is marketed as an IGT Tipica Passito.

Nose

Hanuta, Maxi King, and Knoppers fire on all cylinders and are escorted by dried fruits. Dried figs, dates, orange breath, raisins, and light mulberries give the monkey some sugar. More roasted nuts and almonds, as well as a generous spoonful of salted caramel, keep it on edge, while a bit of toffee and tobacco provide serious spice. Everything is garnished with just the right amount of volatile acidity for the necessary thrill.

Palate

The linchpin of this noble nectar is the orchestral acidity, which not only holds the place together but also inspires it. With silky viscosity and high vibration, it illuminates the mouth with silky nuttiness, saline contours, and balsamic notes of orange, bitter orange, and lemon oils. A wine with an exceptional length and an ambrosial finish.
