Product description for Clos du Moulin aux Moines Volnay 1er Cru “Les Santenots” AOC 2022
Santenots is a Climat winery in the municipality of Meursault, bordering Volnay. The grapes are harvested exclusively by hand and then reselected at the sorting table. Slow fermentation and maceration, with 50% to 70% destemmed grapes, depending on the vintage, takes place in large wooden vats over a period of 15 to 20 days. Fermentation is spontaneous with wild yeasts, with daily pumping over to enhance aroma and colour. The grapes are then pressed and aged for 12 months in used oak barrels. The wines are neither filtered nor fined; they are bottled after the addition of small amounts of SO₂.

Nose
The 2022 Les Santenots Volnay 1er Cru from Clos du Moulin aux Moines initially appears sublime in the glass. It doesn’t want to prove anything, is neither loud nor quiet – it’s simply there. Getting closer to it requires patience and large glasses. Despite the open-heartedness of 2022, it is complex, not exactly closed off, but also anything but talkative. After around 30 minutes, it tentatively peels off its leaves, layer by layer like a Burgundy Baumkuchen: dark fruits, stone fruit, mulberries, elderberry, and floral notes in the overtone range reminiscent of hollyhocks. The heart note gets dark: cocoa nibs, a touch of espresso crema, damp forest floor, long red pepper, and cherry stones. A complex affair.
Palate
The complexity of the nose continues on the palate: Powerful and multi-layered, it unpacks very slowly, revealing itself at first as a dark, ruby-red monolith whose edges first have to be sucked to round them off – thankfully! The tannins package it like a hedonistic luxury item from a Parisian boutique; the extract-sweet fruit is framed by sandalwood and licorice and projected onto the palate by a ripe, broad acidity arc. With good tension and high internal density, it benefits from several years of bottle aging, but already sings the praises of drinking pleasure in chorale.
