Just eight kilometers from the sea, between national parks and the gentle foothills of Abruzzo, lies Francesco Cirelli’s “farm.” Francesco practices biodynamic farming as a holistic concept. In addition to his 4 hectares of vineyards, he cultivates 4 hectares of fig trees, one hectare of olive trees, and 13 hectares of grain. He also keeps a small herd of goats and geese, and a bed and breakfast allows visitors to share in this gem. He vinifies his wines in concrete and steel tanks, and 800-liter amphorae from Florence. Fermentation occurs spontaneously in the cellar, with the red wines undergoing a maceration period of 15 days. The white wines remain on the skins for only one night before being pressed using a traditional basket press. In some years, Francesco filters his wines coarsely, but never the amphora wines. All wines are bottled unfined.

Colour

Delicate rosé with light orange to onion-skin-coloured reflections.

Nose

The nose makes the mouth water: subtle notes of blossom, raspberry, and delicate spicy notes intertwine in a steady flow, quickly drawing the glass to the lips.

Palate

The opening on the palate is marked by a delicate residual sweetness, which is quickly balanced by the fine carbonation. The wine has a fine perlage. Appetizing on the first sip with a delicately tart finish, it is a sparkling wine that one would generally attribute to exhilarating moments of life with appropriate serenity: clinking glasses, laughter, white jackets, and good company.
