Information about the Wine
The Gimmeldinger Biengarten stretches across steep terraces and beautiful slopes of the Haardt Mountains between Gimmeldingen and Königsbach, along the edge of the forest. It is well protected from cold winds by a gentle hollow, and is still used by beekeepers today. The soil of the Biengarten is characterized by tertiary limestone marl, known as Terra Fusca, and lies on the same limestone reef as the Königsbach vineyards of Idig and Ölberg to the north. The old vines bear only a few, loose bunches.
Information about the Winemaking
Approximately 30% to 50% of the grapes remain undestemmed and ferment as whole clusters. This gives the wine herbal, fine tannins. During the cold maceration of 5 days at 12°C, careful daily sparging releases particular color from the berries. This is followed by fermentation on the skins for two weeks, with temperatures peaking at 30°C. Twice daily sparging and punching down releases a lot of flavor from the berry skins. The wine is then aged for 18 months in barriques, usually 10% new wood, the rest used. This is followed by tasting and blending of the barrels. The wine then usually spends about 3 months in stainless steel for final maturation.

The 2020 Gimmeldinger Biengarten Spätburgunder Erste Lage offers a delicate and fragrant bouquet of red cherries, chalk, a hint of iodine and toast. Silky, fresh and elegant on the palate, this is a medium to full-bodied, pure, very fresh, highly finessed and saline Pinot with very fine tannins intertwined with the overall juiciness and crunchy grip. Natural cork. Tasted at the domaine in November 2022.
