The blend consists of Grenache Blanc, Rolle, Clairette, Roussanne, and Viognier—practically all of the region’s common grape varieties. The vineyard is located high up on the Ventoux. After manual harvesting, the berries pass over the sorting table twice. Lowest yields with the highest fruit quality. Fermentation takes place in small batches in the modern cellar, which is completely subordinated to gravity. A mixture of traditional and ultra-modern techniques is used in the cellar. Astralabe is named after the secret son of Abélard and Héloise, a famous couple from medieval French history.

Colour

Sparkling lemon yellow with green reflections

Nose

A fine, playful aroma flows from the glass. Acacia blossom and fully blooming apple trees are intensely recognizable. A hint of chopped almond and the scent of toasted fennel and coriander seeds hang in the air. The fruit opens only gently, quietly revealing hints of yellow apple, quince, and lime zest. Its herbal spice, characterized by sage, lemon thyme, and lemon balm, is much more dominant. Unexpectedly un-Mediterranean, yet totally harmonious for its cool surroundings.

Palate

This very contrast of many hours of sunshine, but constantly cooling winds and chilly nights, also characterizes the palate. The fruit, as well as all the spicy and floral aromas of the nose, are clearly evident. However, they are wrapped in a tight corset. Slender and taut in a Mediterranean context based on these grape varieties. It has a stony, almost salty effect on the palate. The finest bitter substances add positive and style-defining accents, also indicating its suitability for various cooking styles. The ethereal, fresh aromas now show significantly more mint and menthol candies, which creates a very invigorating, cool finish.
