Information about the wine

The name of the vineyard, Côte aux Prêtres, Hill of the Priests, refers to the nearby pilgrimage route from Vézelay to Santiago de Compostela. The spectacular vineyard is situated on a hill, and the dome is exposed to sunlight and wind. The soil is dotted with many small Kimmeridge limestone stones. After being hand-picked, the grapes were gently pressed and fermented spontaneously for a long time. The Côte aux Prêtres was matured in tanks and large wooden barrels, where it was allowed to age on the fine lees. After aging, the Chablis was bottled unfiltered and unfined with only a slight addition of sulfur.

Nose

The Côte aux Prêtres 2021 appears fragrant, clear, and pure with crushed rock, herbs, and the juice and zest of Cedrat and Amalfi lemons. It is a Chablis whose aroma alone is electrifying and exciting, especially since the warmth also brings with it a very subtle hint of wood and nougat.

Palate

On the palate, the Côte aux Prêtres is just as exciting and electrifying. Here, too, it offers a delicious salty character with plenty of yellow and green citrus fruits, but also a touch of wood, a hint of nougat, and a light creamy texture. Overall, however, the vintage appears extremely pure, electrifying, and salty. It pulsates and moves in waves over the palate again and again.
