The Pet-Nat is made from Pansa Blanca (Xarel-lo). The vines are located directly on the Mediterranean Sea on sandy granite soils at an altitude of 100–220 m. Using the ancestral method, the must begins to ferment and completes this process in the bottles. 15–24 months of aging on the lees follow.
Color
Bright, light straw yellow, with golden highlights. The perlage is restrained, yet lively and detailed.
Nose
The nose opens with a complex array of yeast, yellow fruit, pastry, and nuttiness. It smells of yeast pastry, butterscotch, and shortcrust pastry, flanked by apricot, mirabelle plum, peach, and khaki. Spicy accents such as cinnamon, white pepper, and a hint of plum round out the fruit. Nutty notes of almonds, cashews, and dried Mediterranean herbs—sage, thyme, oregano—add depth. The overall impression is chalky to chalky, finely and precisely structured. Compared to other Cavas, this example appears less citrusy, but more yellow fruity, with more volume and a broader pear-based profile. Despite its traditional style, its aromas are distinctive: grilled pineapple, unripe green mango, mirabelle plum—everything remains bright, transparent, and elegant.
Palate
The carbon dioxide packs a powerful punch, bringing freshness and structure. The minerality is precise and chalky, yet not loud—rather present, distinctive, and stylishly understated. The wine remains lean, racy, and stimulating—carried by a balanced tension between yellow fruit, acidity, and minerality. In the background, light nutty notes—almonds, cherry stones, hazelnuts—as well as delicate hints of linden and apple blossoms emerge. The Mediterranean spice remains subtle and structurally effective. Finesse and broad accessibility are clear strengths of this sparkling wine. It displays a wealth of character, yet remains charming, clear, and stimulating.

The fresh and fine white 2023 And the winner is, a wine born during the pandemic, was produced with a blend of Xarel·lo, Macabeu, Parellada, Garnacha Tinta and Malvasía de Sitges from different vineyards and vinifications, taking advantage of musts that were discarded in the past and sent to the distillery. It’s balsamic and a little medicinal, light and easy to drink, with the free and characterful profile of the Can Credo wines, clean and precise but with some rustic earthiness. It has 11% alcohol, a pH of 3.2 7and 4.6 grams of acidity, from a year when it was difficult to keep the freshness and acidity even using the musts with a higher pH. With time in the glass, the ripeness of the year is a little more evident. 25,000 bottles produced. It was bottled in April 2024.
