Wine Information
The Seconde Nature is a champagne made from 45% Pinot Noir, 40% Chardonnay, and 15% Meunier. The fruit comes from the Chamery single vineyards “les Vigneules,” “les Spectres,” and “les Caquerets,” with southeast-facing slopes. The topsoil consists of calcareous clay interspersed with limestone pebbles, while the subsoil consists of sand and fossilized shells. The base wine from the Cœur de Cuvée was spontaneously fermented and aged for nine months in four-year-old 228- and 400-liter barrels. Malolactic fermentation took place. The wine was not sulfurized but disgorged as a Brut Nature. This bottle was bottled in May 2021 and disgorged in September 2023.

Nose
For me, the Seconde Nature has become the epitome of a high-quality, handcrafted champagne. It is open and inviting, charming and full of character, delicately spicy and sensual, yet fresh and precise. It offers notes of grapefruit, Meyer lemons, and kumquats with zest, a hint of blond tobacco, graphite, lime, and also notes of warm toast lightly spread with butter and honey.
Palate
On the palate, the Seconde Nature offers Cyril Bonnet’s now well-known, typical style: the wine is spicy with a deliberate touch of oxidation, expressed in notes of crumbly apples and their skins. There are also tart, zesty, and spicy tobacco notes. It is full of energy and lively minerality. Despite the dryness of the Seconde Nature – no dosage was added – the champagne offers an elegant and smooth extract sweetness and, as already evident in the nose, a very faint hint of lukewarm toast. The finish, alongside the citrus fruit, reveals red berries and herbs. The perlage is lively to fine, reflecting the length of aging. The slightly salty note in the finish enhances the drinking experience.
