Product description for Bonnet-Ponson Cuvée perpétuelle, RP21AB, Extra Brut Premier Cru NV (bio)The Cuvée Perpetuelle Extra Brut is a blend of 40% Pinot Noir, 30% Chardonnay, and 30% Meunier from the base vintage of 2020, as well as 40% reserve wines from previous harvests, which are continuously blended (solera method). The grapes come from a total of 35 plots in the Chamery, Vrigny, and Coulommes-la-Montagne vineyards, classified as Premier Crus and located in the western part of the Montagne de Reims, the Petite Montagne. The average age of the vines is 35 years, and the soils include silty-calcareous sands, silty-loamy soils on a calcareous subsoil, and calcareous clay soils with millstone. The first fermentation takes place (85% in stainless steel tanks and 15% in oak barrels), with malolactic fermentation being a desired stylistic feature. Before being blended with the reserve wines, the wines mature on the lees for eight months. Then, unfiltered and with only minimal addition of sulfites (less than 25 mg/l), they mature in the bottle for at least four years. Finally, they are given three to four grams of shipping liqueur.
Colour
Intense straw yellow with light copper reflections and fine mousse.
Nose
The nose of the Cuvée Perpetuelle Extra Brut 1er Cru RP20AB from Bonnet-Ponson is clear and tidy, with almost bookkeeping accuracy. Initial autolysis notes of pastries like sourdough crust are neatly arranged within the array of saline aromas of oyster shells and wet pebbles, along with blackboard chalk. Citrus is on board anyway, as are the light oxydant notes of a sliced red apple. White currants and a touch of rhubarb provide the strings in the chorus.
Palate
On the palate, it’s red fruity and tart, with more rhubarb, good tannin, a grippy finish, a chalky texture, and an aromatic swing between citrus fruit with lime zest and a salty, mineral character. With a good punch, it brushes pleasantly against the grain on the palate, fueled by the finely buoyed mousse.
