The winery, located in Chamery, was founded in 1862 by Grégoire Bonnet. In 1956, André, the grandfather of today’s winemaker Cyril Bonnet, married Monique Ponson from Vrigny. This is how Champagne Bonnet-Ponson was born. Their son Thierry took over the winery in 1979. In addition to the Premier Cru vineyards in Chamery, Vrigny, and Coulommes-la-Montagne, the estate also includes several Grand Cru parcels in Verzenay. In 2013, Cyril Bonnet returned to Chamery after training and working in the South of France and officially converted the winery to organic farming. Cyril, who bears a striking resemblance to the young Jack Sparrow in Pirates of the Caribbean, has established as his trademark the saber his father used to saber champagne bottles while serving in the cavalry in Saumur.
