Info
The Monastrell (Mataro) vines are located at an altitude of 100–220 meters directly on the Mediterranean Sea. Alta Alella grows on Sauló, a sandy granite soil. The wines are oriented southeast, facing the sun. After the harvest, the grapes are cold macerated for 10 hours to enhance aroma and color. The must is then fermented in steel tanks and bottled as the base wine without any additives for a second fermentation. At least 30 months of aging are required before disgorgement. In this case, it was a full 47 months, with the wine only separated from the lees in February 2025.
Color
Intensely bright pomegranate rosé with light and orange reflections. Its perlage is highly intense and features small bubbles. The mousse actively foams and then persists on the surface for minutes.
Nose
The nose of this Cava Brut Nature is convincing after 47 months on the lees and a disgorgement date of February 20, 2025. For me, it shows surprisingly little fruit for such an intensely colored rosé, which I find very positive. The nose shines with rosehip, pomegranate, red currant, and ripe wild raspberry. A hint of sour cherry provides freshness and additional contrast. It captivates with yeasty, elegant, and typical accents. The yeasty nuances are evident in almond pastries, salt dough, and fresh yeast plaited bread with glazed almonds. The fruit is enveloped by a light, sweet component. White pepper, allspice, sage, and oregano provide striking accents. The rosé appears cool in itself, testifying to its barren soil.
Palate
On the palate, the fruit combines with a slightly creamy, yogurt-like component. This is flattering and charming, complementing the rising mousse on the palate well. The acidity is important, but not the dominant part of the palate. The fruit can certainly hold its own. The distinctive aromas and spicy nuances are more subtle on the palate. It is balanced and harmonious. The fruit also comes through in the aftertaste, primarily through rosehip and wild raspberry.
