Wine Information

Vins El Cep is one of the most renowned Cava producers in the Penedès region. This rosé is made from 100% Pinot Noir from 35-year-old, organically farmed vines. Winemaker Maite Esteve presses the grapes directly, without any maceration, and uses only the first-run must for the base wine to achieve the greatest possible finesse. After traditional bottle fermentation, the sparkling wine rests on its lees for 24 months. The sparkling wine is accordingly classified as a Reserva and bottled with a Brut dosage.

Nose

In sparkling wines made from red grapes such as Pinot Noir, yeast notes are generally less evident than in white grapes, as is the case with the MIM Pinot Noir Brut Reserva 2021. This Cava offers a remarkably fresh and seductive nose, accompanied by crisp red fruits, floral aromas such as violets, and a hint of almonds.

Palate

The MIM demonstrates excellent balance on the palate: body, structure, fruit, and acidity are all perfectly matched. It has a silky-creamy texture, is extremely fresh, and also minerally. Despite its expressiveness and fullness, it has nothing opulent about it, but rather feels precise and elegant in the mouth. It offers a juicy acidity and a stimulating, long finish, with the dosage in the Brut range providing a beautiful balance.
