A unique wine from the terraced, steep Enkircher Ellergrub vineyard with ancient, ungrafted vines. The vines are on average over 100 years old. They grow on blue, hard slate with abundant quartzite inclusions. The old vines still produce a yield of just 15 hl/ha. The vines for the Kabinett are located in the lower part, where water is plentiful. Alexandra Künstler and Konstantin Weis attach enormous importance to the Kabinett wines receiving a good water supply, and they value the finesse in this wine category above all else. The wine is fermented in large oak barrels and then transferred to steel tanks after racking. A slim 7.5% ABV is accompanied by a striking 10.1 g/l acidity and a significantly lower 55 g/l residual sugar.

Bright, luminous straw yellow with delicate green reflections

Nose

This Kabinett from the Ellergrub vineyard in Enkirchen is a prime example of the dark slate soil. Alexandra Künstler and Konstantin Weiser have succeeded very well in allowing the dark colour language of the subsoil to speak through the wine. This gives it a mystical and mysterious appearance. The fruit is still subtly wrapped in a dark robe and reveals itself only restrainedly. Its fine herbal spice is all the more intense for it. Nettle, lemon balm, mint, and coriander are clearly perceptible. It radiates lightness and invites you to indulge generously. The sweet attributes of the Kabinett are almost imperceptible in the aroma.

Palate

On the palate, it takes this very lightness to the extreme. Full of finesse and blessed with plenty of energy, it whips forward. The fruit remains bright and restrained. Its herbal freshness lingers for minutes. More importantly, however, is its immense drinking pleasure. It successfully combines a clear acidity structure with fine, cool minerality and delicate sweetness at the beginning. It then continues this interplay for minutes. Enormously stimulating. Despite its lightness, it still manages to generate aromatic diversity and depth.
