The Fosilni Breg, the mountain of fossils, is characterized by its coral-limestone soils and rich in fossilized marine creatures. The domaine’s Sauvignon Blanc vines grow on barren soils with a layer of clay-rich marl, also known as flysch or opok, and fertile brown earth on top. The grapes for the 2019 Ciringa Pruh come from a parcel called Pruh, an old quarry in the Ciringa vineyards. The site is located directly next to the Zieregg at an altitude of 340-480 meters. After a long maceration period, Pruh was spontaneously fermented, aged on the fine lees for 46 months, and bottled unfiltered.

Nose

The 2019 Ciringa Pruh from Domaine Ciringa is calibrated to be super stony and disciplined on the nose thanks to its coral limestone soils. Wet stones, a raked pebble path in front of a chateau, and a brisk sea breeze ground it in its stony, barren character. Without any flashy aromatic fireworks, it is clearly Sauvignon Blanc: elderflower, gooseberry skin, and vegetal-green notes alongside lime zest and lemongrass.

Palate

The disciplined impression continues on the palate: perfectly formed with the finest manners, the parting neatly styled, the shirt tailored, and the nails impeccably manicured. Not a hair is out of place; everything is stringently ordered and choreographed. Aromatically firm with a decent bite and accelerated by the ripe acidity, it pulsates on the palate with almost electric minerality, brilliant melting and a cathedral-cool finish.
