The Scarbolo winery is located in the Friuli Grave, the eastern hills of Friuli. Mattia and his sister Lara have been working with their father since 2020 to completely restructure the business founded by him. Mattia, who had initially landed in the financial world of New York, felt a desire to return to his homeland. Lara had already studied in Udine and Bordeaux and worked for Franz Haas and Vie di Romans, among others. Inspired by personalities such as Luca Roagna and Arianna Occhipinti, Mattia and Lara immediately converted to organic farming with biodynamic influences, downsizing by almost 50%, and significantly streamlining their product range to produce some of Friuli’s most distinctive wines in the future. The focus is on Pinot Grigio in all its possible facets, which to this day are far too rarely explored.

The 2020 Pinot Grigio Salvadi is simply stunning, showing a vibrant pink-ruby color. A complex bouquet wows the senses. A burst of dried flowers, incense, medicinal peach and confectioner’s spice effortlessly wafts up from the glass. It’s silky-smooth, nearly juicy in character, as brilliant acidity propels its red fruit profile, showing notes of young strawberry and sweet cherry. The 2020 finishes long and perfumed, lingering on tropical citrus and ginger hints as a liquid floral concentration slowly fades. This unique and exotic beauty macerates for ten days on the skins. The Salvadi hails from the Codis vineyard with soils made up primarily of silty loam with high iron content. It’s a wild wine.
