Information on the vineyard

Simple South Tyrolean pergola on very steep terrain. Loamy sand, volcanic origin, and morainic deposits (porphyry, basalt, granite), very deep and permeable.

Information on the winemaking

Biodynamic, without the aid of tractors. After hand-picking, the grapes were crushed and fermented spontaneously in wooden fermenters, without temperature control, with 80% of the grapes removed. This was followed by five months of fermentation, including cold maceration, aging in wooden fermenters and oval barrels for 12 months, and 10 months in concrete and oval barrels. Bottling by hand, without fining or filtration.

Colour

Light, muted garnet red with violet highlights towards the rim.

Nose

The aroma of the 2018 Campill is dominated by profound and earthy components, with tree bark, cigar smoke, fireplace, and beetroot providing the opening. With oxygen, dark and tart fruits emerge, lending it complexity and appeal: sloe, mulberries, and dark plum jam combined with rosemary and thyme—how inviting.

Palate

On the tongue, it is both elegant and refreshing; fine tannins meet invigorating acidity, embedded in a fruit that reveals itself more like red berries on the palate. With its moderate alcohol content of 12% vol, this is a Schiava that, when chilled, fulfills its purpose of being an excellent accompaniment to savoury dishes.
