Info

The name clearly says it all. Habla del Mar is based on Atlantic grape varieties and is fermented at 2°C in 300l tanks approximately 25m underwater in the Atlantic Ocean. In the French coastal town of St. Jean de Luz, near the Spanish border, divers lower these tanks into the sea. The result is a unique wine with a fine minerality and saltiness, structure and elegance, and corresponding complexity. The low fermentation temperature also ensures very fine carbon dioxide formation, which imbues it with freshness.

Colour

Bright straw yellow with delicate green reflections

Nose

The nose is cautiously fruity, rather subtle. Now, quite frankly, one can also identify abundant maritime aromas. Fresh seaweed, nori seaweed leaves, iodine, and sea spray. Oyster shell and wheatgrass also feature. For me, it also displays nuances of honey and yellow fruits. Pear, quince, yellow apples, and mirabelle plum stand out. It also draws freshness from sage, menthol, and lemon balm.

Palate

On the palate, it appears vibrant and taut. Despite the intensity of the now budding fruit, it is able to hold its own thanks to the light carbonation. The high fruit, combined with a delicate honey sweetness, is repeatedly broken up by the freshness in the wine. It appears fruity and intense, full-bodied, and dense. But it certainly doesn’t convey heaviness. A light, salty, maritime breeze surrounds it here too. Paired with the ethereal freshness in the finish, it appears both yellow-fruity and ripe and refreshingly green.
