If you want to find Georges Laval’s house in Cumières, you need precise directions. It’s located in a nameless ravine and has no sign on the door. What looks so uninspiring actually houses a unique gem. The Lavals have been working organically in their vineyards since 1971. Vincent Laval has run the winery since 1996 and has elevated it to the level of winemakers like Jacques Sélosse. Laval consists of 2.5 hectares of vineyards, cultivated with a small tractor and a horse, and whose wines are pure and unadulterated, yet shine with a distinctively unique style. Vincent makes just five Champagnes. The wines are always aged with minimal intervention in used barrels that are topped up weekly. Nothing is added except a minimal addition of sulfur, and nothing is fined or filtered. The Champagnes age in the cellar for 18 to 50 months.
