Product description for Bakkanali Bakkanali Kab IGT 2023 (bio)
The grapes for this Cabernet Sauvignon come from a single hectare of organically farmed vineyard on Monte Amiata near Poggioferro. The vines grow on iron-rich, limestone-rich soils at an altitude of 550 meters and are now 19 years old. After the harvest, spontaneous fermentation with natural yeasts takes place on the whole bunch – under semi-carbonated conditions – with a maceration period of 8 to 12 days. Further aging takes place exclusively in concrete tanks to ensure the purest and most authentic expression of the grape variety. Sulfur use is minimal, with less than 25 mg/l total SO₂. Annual production is approximately 5,000 bottles.

Nose
The nose of the 2023 “KAB” Cabernet Sauvignon from Bakkanali can safely be described as Tuscanified Cabernized. The grape varietal regulators are all at maximum, paired with the unique odor of Tuscany: maquis, bay leaf, juniper, rosemary, thyme, and black olive. Fueled by fully ripe fruit, it exudes a powerful fragrance of cassis, piment d’Espelette, and floral top notes from the calyx.
Palate
The first sip is refreshingly stringent: the cool fruit is tightly laced in a phenolic corset and is spicy complemented by cassis and blackberry leaves. With tart charm and powdery-fine tannins, the dark red fruit illuminates the palate and accompanies it into the almost minerally cool finish. An atypical Cabernet with medium density and a friendly, versatile nature.

Deep magenta in hue, the 2023 Toscana Rosso Kab slowly opens in the glass with a whiff of crushed stone reduction that blows off to reveal a core of sage, flowery underbrush and blackberries. This is seamlessly silky in character yet lifted in feel. A wave of tart wild berry fruits floods the senses, leaving minerals and a savory herbal thrust toward the close. The 2023 finishes with staining length yet only gently tannic as a tart resonance of licorice and black currant lingers. The Kab is an atypical Cabernet Sauvignon from the high-elevation slopes of Mount Amiata. Give it a short decant for the best results.
