Wine Information

The newest addition to the basic portfolio is the Chablis “Gabrielle,” named after Gabrielle Tremblay, the grandmother of Romain and Damien Bouchard. She helped her husband André Tremblay establish the winery and planted vineyards near the family home in La Chapelle-Vaupelteigne. The wine comes from La Chapelle’s oldest plots, with 42- to 52-year-old vines. The soils are chalky with Kimmerdige and Portlandian limestone, and the grapes are harvested by hand. After the harvest on September 9, 2022, the grapes are pressed directly, and the must ferments spontaneously in stainless steel fermenters. The Chablis was aged for 13 months in stainless steel. After aging, it was lightly filtered and sulfurized. The total sulphur content is 35 mg/l.

Clear medium straw yellow

Nose

The Chablis Gabrielle has a truly classic aroma. This is picture-perfect Chablis with lemons and zest, salted lemons, crushed lime, oyster shells, green plums, green apples, and a few white blossoms.

Palate

On the palate, the Chardonnay is full of tension and energy, with more vibration and more flesh than a regular Chablis. It’s so fresh, fragrant, and salty that you can hardly sit still and instantly wish you were on the Atlantic. Best served with a seafood platter.
