Nose

The nose is alive with ripe stone fruit in all its facets. Dried pear, apple compote, and baked quince dominate initially. Appropriate spices such as cinnamon and cloves are also present. Associations of tarte tatin or baked apple become omnipresent in the room. As soon as this veil of stone fruit lifts, it becomes wilder and more unpredictable, but also more Mediterranean.
