Information about the wine
The Hipping grapes were hand-picked in several harvests to achieve the golden cut, an early golden colour of the grapes. They were mashed with feet and allowed to stand for three days before being pressed for 36 hours without pre-clarification. Spontaneous, non-temperature-controlled warm fermentation took place in old 1,200-liter wooden barrels until oxygen depletion occurred. Malolactic fermentation then took place in the barrel, and the wine was aged there for 35 months under a completely clean, reductive Flor yeast. This made it possible to bottle the wine unsulphured and without sulphur. The wine was processed entirely reductively. Had it been bottled earlier, the wine would appear similarly reductive to Kai Schätzel’s previous wines. At 11.5% alcohol by volume, the wine has 1 gram of residual sugar and 7.5 grams of acidity, with minimal sulphur content.

Nose
Kai Schätzel’s interpretation of Hipping has evolved with the evolution in his cellar. The wine today appears much more open and inviting thanks to the production process described above. With notes of apples, quinces, pears and their skins, a touch of wool wax and apple cider, some licorice and hops, crisp stone fruit, and some lichen, it seems more like a natural wine from Anjou.
Palate
On the palate, the Hipping initially offers a light CO2. Then it becomes tamed and wild on the palate with plenty of herbal notes and rock, a pleasantly firm phenolic and grip, notes of pome fruit and peel, some grapefruit, tea, and warm apple juice. Overall, this Großes Gewächs wine is piquant and tart, with sheer juiciness and saltiness, as well as a silky acidity that lends the wine an impressive smoothness. Never before has this wine been so open and embracing, so sensitive yet stable. It is unique among the vast array of Großes Gewächs Riesling wines. Soothing on many levels.
