Description

Benoit Lesuffleur’s family has been growing apples for 50 years, but the harvest was previously sold to the large cider producers. Benoit worked during and after his studies in Paris as a wine broker for well-known producers from Burgundy. The decisive impulse to reorganise his parents’ business resulted from his collaboration with the Tarlant champagne house. His idea was to make top cider at the level of a top champagne. However, he does not use the classic method of second fermentation in the bottle, but rather the méthode ancestrale. Here, the fermenting must is filled into bottles and ends the first fermentation in the bottle. This means that no additional sugar or pure yeast is added. All other production steps, from apple cultivation, selection and vinification are aimed at producing a sparkling cider that offers a drinking pleasure on a par with champagne.
