Information about the wine
The white wine Pedra de Guix consists of one-third each of the Pedro Ximénez, Macabeo, and Garnacha Blanca grape varieties. The biodynamically cultivated vines are between 50 and 80 years old and come from three different locations with clay, alluvial, and slate soils in the Catalan Priorat. The wine is a homage to the great wines of Andalusia, and as is still customary in some parts of Andalusia, winemaker Dominik Huber presses the grapes between mats in an old basket press. The slow pressing already results in a subtle, deliberate oxidation. But the Pedra de Guix is no mere copy—Huber gives it his own signature and ages the wine in cement tanks. For the first time, the winemaker dispensed with the foudres in which he previously aged it for the 2021 vintage. The character of Pedra de Guix may have changed slightly—it seems less oxidative, for example—but its uniqueness and distinctiveness remain. Pedra de Guix is certainly a prime example of a wine that combines tradition and contemporary style.

Pedra de Guix 2021 is sensual and fragrant, dominated by herbs and floral aromas. The nose is wonderfully fresh and stimulating, and the bouquet is impressively deep, elegant, and balanced.
Palate
Clarity, depth, and tension also characterize the wine on the palate. Pedra de Guix is like a natural beauty without makeup. Its texture feels wonderfully polished and silky, the aromas are delicately spicy and citrusy, and the long finish is carried by a salty minerality. Despite all its complexity, this white wine also has a fabulous flow. You can’t stop drinking it.

They shortened the élevage of the white 2021 Pedra de Guix to 11 months, and they also stopped using the 1,800-liter foudre, where the wine partially aged in the past, and now it’s matured in concrete vats (diamond-shaped ones!). The wine is floral, vertical and a lot less oxidative than even the 2019, which is less oxidative than previous years. It’s a different profile of wine with very good depth and freshness. Funnily enough, this 2021 has a little more alcohol than the 2019 (13.5%), but the wine feels lighter on its feet. 4,008 bottles produced.

The 2021 Pedra de Guix blends one-third Pedro Ximenez, one-third Macabeo and one-third Garnatxa Blanca from Priorat. Fermented in concrete with whole clusters, this golden wine presents a vermouth-like aroma with notes of garrigue, stems, pears and quince in an oxidative, sherry-like style. Dry and taut on the palate, it features a chalky texture and a faintly pastry-like finish. This is a distinctive entry in the new white Priorat scene.
