The Fosilni Breg, the “mountain of fossils,” is characterized by its coral-limestone soils and rich in fossilized marine creatures. The domaine’s Sauvignon Blanc vines grow on barren soils with a layer of clay-rich marl, also known as flysch or opok, as well as fertile brown earth. The grapes for the 2020 Réserve have particularly small berries and are only used for the Réserve in exceptional years. The site is located directly next to the Zieregg at an altitude of 340–480 meters. After a long maceration period, the Réserve was spontaneously fermented, aged on the fine lees for 30 months, and bottled unfiltered.

Nose

The 2020 Sauvignon Blanc Reserve from Domaine Ciringa reveals itself on the nose with great discipline. With quiet elegance, it first tells of its long lees aging, then of the small-berried grapes that only in exceptional years deliver the quality for the reserve. A stony, sparse herbal spice outlines the aromatic picture: black cumin, coriander, fennel greens, and grapefruit zest form the foundation. Added to this are sourdough bread crust, chervil, and citrus blossoms in the top note. A light and airy Sauvignon with a distinctive personality, extremely social.

Palate

The floral citrus theme of the nose continues on the palate, from lemon to tangerine to orange, encompassing both their juice and the zest oils. Expansive with a mature character, it presents itself creamy on the palate with a solid bass and a precise crown. Here, everything is in its place – taut and disciplined, a prime example of a terroir-influenced Sauvignon that does not deny its character but rather reaches its full potential thanks to its origins – without the usual aromatic excesses.
