The blend consists of 57% Chardonnay, 29% Pinot Noir and 14% Pinot Meunier. After the 2002 harvest, the base wines underwent their first fermentation in wooden vats. Malolactic fermentation was not forced. The wine was bottled in July 2003. Disgorgement took place on 27 September 2018 and the dosage for this Brut Nature is 0g/l.
Colour
Sparkling lemon yellow, very fine perlage and creamy mousse.
Nose
Wow! The fifteen years on the lees until disgorgement in September 2018 have created a monumental wine. Its expression of character, origin, identity and great elegance is unique. The nose reveals roasted hazelnuts and almonds. The extremely long lees aging spreads an absolute feeling of well-being through the aroma alone. Yellow and green apples in all their forms. Buttered brioche. Almond biscuits and shortcrust pastry. Your thoughts wander completely. Lemon tart with burnt meringue. And behind the countless aromas and nuances there is always a wall of pure chalk and filigree. You can hardly wait for the first sip.
Palate
It really gets going right from the first sip. A fantastic combination of maturity, yeast autolysis, and minerality. The mousse forms the first moments in a creamy and opulent manner. Barely has the melting point reached its peak when its balanced acidity kicks in, creating a balancing act. The acidity harmonizes brilliantly with the fabulous minerality. Lemon and apple aromas provide a kick of freshness. The wine’s maturity is undeniable. But it has matured with absolute dignity and is just the right amount in this construct. The mouthfeel is elegant and delicate. The finish lingers endlessly on the palate. A sensationally good wine.
