Sebastian Bordthäuser: On the palate, the Cottá oscillates between inviting hospitality and youthful stubbornness, which quickly reveals itself as attitude. The taut, almost chewy tannins provide the Sottimano-typical bite and clothe the youthfully bright acidity in purple regalia. The overall concept combines vertical drinking with a gastronomically attractive drinking window.

Christoph Raffelt from February 14, 2023: The Nebbiolo comes from the Cottá vineyard in Neive. The average yield is 15 hl/ha. Sottimano has been farming this vineyard organically since the 1970s. The fruit was destemmed and fermented for up to 60 days or left on the skins, with the pomace cap being regularly punched down during fermentation in open stainless steel fermenters. The wine has been matured in large, slightly conical botti since 2020. The barrel aging period was around 24 months.

Colour

Bright cherry red with light reflections and a tendency towards rust-coloured accents.

Nose

The 2021 Barbaresco Cotta starts off on a distinctive and spicy note. On the one hand, there are rosehip, wild strawberry, raspberry, and a hint of sour cherry. I would also assign barberry, rooibos tea, and cranberry to this red, fruity side. Red pepper further supports this facet of the wine. On the other hand, there are earthy and distinctive aromas. Undergrowth, some forest floor, and plenty of ethereal pine needles can be detected. Cedarwood, cigar box, and light tobacco leaves provide plenty of balsamic moments. Black pepper and juniper combine spice with freshness. Equally important are the wine’s Mediterranean aspects, which are best described by rosemary and thyme. Freshly chopped hazelnuts, with the addition of oxygen, become omnipresent in the glass. Furthermore, over time, it develops a very dominant, chalky aroma that is very promising.

Palate

The first palate immediately combines elegance with tannin and minerality at a high level. Its fruit appears warm and velvety, yet completely without rough edges. Rosehip, rooibos, and wild strawberry are the more prominent representatives. The tannin then breaks through and coats the mouthfeel very subtly. Its nutty aroma and pleasant bitterness cling to it. Everything is well-dosed and in symbiosis with one another. Hazelnut and walnut, in particular, are very clearly recognizable. Time and again, it has a cooling effect, and the mineral characteristics come through fully. Its spicy side is fully evident in the aftertaste.
