Nose
The nose initially develops wildly and impetuously. The Hipping Riesling Kabinett is still noticeably influenced by the reduction in its youth. It also appears marked by gunpowder and flint. Its fruit is still very restrained and fluctuates between yellow and green: yellow apple, khaki, lime, and mirabelle plum. The herbal aromas are noticeably more intense, albeit more in dried form. Sage, oregano, and marjoram stand out. A hint of mint extract and sencha tea provide vertical experiences.
Palate
On the first sip, it builds its finesse and thrives on a fine acidity. It dances along as if on a thread. It moves forward very well. Bitter substances repeatedly cling to it, providing an invigorating lingering sensation. The fruit is completely subdued on the palate. There’s no overt sweetness at all. Hipping is a very contemporary Kabinett wine that exudes a flowing character, yet doesn’t hide its origins. A pure red wine, carefree, light-footed, and very appealing. It’s characterized by great elegance. You shouldn’t let a glass sit for long.

Macerated for 12 hours and vinified in 600-liter barrels, the Nierstein Riesling 2023 Hipping Kabinett was aged for eight months on the lees and bottled in July with 61 grams per liter of residual sugar and, at a least initially, a petty prominent dosage of 215 milligrams per liter of total sulfur dioxide (54 milligrams per liter of free sulfur dioxide) that underlines the savory phenolic notes. The wine is sweet and savory on the elegant and texturally refined palate yet still very reduced and not really opening or widening on the palate. The wine remains lean and linear for now. The total acidity of 10 grams per liter is not for the faint hearted. 7.5% stated alcohol. Diam 10 cork. Tasted in November 2024.

The 2023 Riesling Hipping Kabinett is still reduced on the nose, showing flint first and foremost. The palate is juicy and bright, with tempered apple sweetness. It has a lemon verve and glorious saltiness that work well together. An exquisitely light body just dances as 52 g/L of acidity plays against a thrilling 11.5 g/L of acid. (Medium)
