Antoine and Olivier Chastel and his wife Lucrèce Bruyant are the new generation at the 40-year-old Romanesca winery. They have set their sights high, but they are already building on a property that has been run in an exemplary manner. When they took over, they began the certification process for organic farming, which will be completed in 2022. Most of the property is in Moulin-à-Vent, plus one hectare each in Fleurie, Morgon, and Juliénas. They work in the classic way, i.e. with semi-carbonic macération and ageing in used wood or cement, in order to bring out the character of the vineyard as clearly as possible.
