Description
The 65-hectare Recaredo winery is one of the most traditional in the entire Cava region and also the most principled. This includes many areas, including that of the appellation. In 2017, together with ten other wineries, they left the D.O. Cava and now produce their sparkling wines under the name Corpinnat. The basic philosophy of this group is organic or biodynamic cultivation and at least 18 months of ageing in the bottle. But at the Recaredo winery, which was founded in 1921, they go even further. For the tirage, i.e. the second fermentation, only wild yeast strains and sweet must from their own grapes are used. In the winery’s cellars, every single bottle matures under cork for at least 30 months. Every single Corpinnat is a Gran Reserva with vintage indication, disgorged by hand. That is the gold standard!
