Rebholz Winery
The international name for Burgundy grape varieties is Pinot (France, Italy). Since scientists have determined that the Chardonnay grape variety is only a very close relative of the Burgundy/Pinot family, the “family name” Pinot may no longer be used for a cuvée of Burgundy grape varieties and Chardonnay. We therefore use the protected designation “π No.” (pronounced: Pi No) for such wines. Since the early 1990s, we have also been very successfully producing sparkling wines from our Burgundy grape varieties. The classic Champagne grape varieties Chardonnay and Pinot Noir (Pinot Noir) are generally used for this purpose.
Maturation Information
This sparkling wine, made from Blanc de Pinot Noir, was produced like a Champagne. After hand-picking, the whole grapes were pressed, of which only the first press fraction, known as the “cuvée,” was used for this sparkling wine. The base wine was fermented and aged in small used wooden barrels. Only after 3 years of aging in the bottle was it removed from the lees and disgorged without dosage.
Colour/Appearance
Light, sparkling golden yellow, delicate silver reflections/fine, broadly scattered perlage.
Nose
The “Pi” No Extra Brut sparkling wine is extremely elegant, with the finest yeast notes intertwined with pear, apple, and peach. Cool, chalky notes are hinted at, along with captivating grapefruit and herbal notes. A scent that beguiles and enchants, clear and precise, with a distinctly mineral and profound character.
Palate
Upon reaching the tongue, it captivates with its compact and invigorating finish, creating a highly stimulating effect. The juicy fruit and the invigorating, delicate carbonation, as well as the salty aftertaste, immediately trigger saliva flow, and the long aftertaste reveals floral notes alongside herbal notes. This prancing and extremely sophisticated sparkling wine not only makes a magnificent aperitif, but also complements the finest dishes with its congenial presence.
