The Nikolaihof is the oldest winery in Austria, with a history dating back to 63 AD. After secularization at the end of the 19th century, the business passed into the hands of the Saahs family. Nikolaus Saahs took over management in 2005. Since 1971, the Nikolaihof has operated according to biodynamic principles, which ultimately led to Demeter certification. Since then, the motto has been: nettle manure, valerian drops, horsetail tea, and specially prepared preparations instead of herbicides, pesticides, or fungicides. Grown on clay, loess, and paragneiss in partially terraced vineyards, the 2023 Hefeabzug Grüner Veltliner matured for six months in large wooden barrels on the fine lees before being bottled in April 2024 with 1.5 grams of residual sugar and 5.4 grams of acidity.

Nose
The name of the 2023 Grüner Veltliner Hefeabzug from Nikolaihof says it all – or rather, the aroma: It smells of yeast extraction and is therefore strongly reductive on the nose. Initially, saplings, a hint of egg salad, and flint dominate, but evaporate with sufficient aeration. Then it shines sparkling clean and smells of kitchen herbs, coriander, cress, and fennel, followed by spicy-cedary notes of white pepper with citrus overtones. The initial reduction leaves a mineral impression reminiscent of wet stone.
Palate
On the first sip, the Hefeabzug is again characterized by yeast: aromatically tart and creamy, while the fruit seems to be nestled in cotton wool – until the distinctive minerality takes hold. Firm and grippy on the palate, with a rough, almost powdery surface, it ensures phenomenal drinking flow—no, compulsive drinking! A wine that undergoes an impressive transformation on the nose and palate within a very short time, offering enormous pleasure for just a few euros.
