Product description for Marco de Bartoli Metodo Classico “Terzavia” Brut Nature DOC 2022 (bio)
Terzavia means something like “the third way” and, after Marsala and dry Grillo, is the third interpretation to capture the island’s dynamism and elevate the grape variety to a whole new level – French tradition with Sicilian personality. Produced according to the traditional method, this spumante is made from 100% Grillo and was bottled non-dosé. The grapes for this sparkling wine are harvested starting in the second week of August, manually selected, and then chilled. This is followed by a direct, soft pressing of the whole bunches, and after natural decantation of the must, fermentation with natural yeasts begins in stainless steel tanks. 20% of the grapes are fermented in French oak at a controlled temperature. Tirage is performed using fresh must instead of sugar, and the wine then ages on its own lees for at least 18 months.

Light straw yellow with a silver rim and constant perlage.
Nose
On the nose, Marco de Bartoli’s Terzavia Brut combines delicate oxidation with fine pastries and subtle fruit, wafted by a warm, Mediterranean breeze. The aromas of fresh rye sourdough crust combine the subtle autolysis notes with delicate oxidation, which is reflected in the fermented character of the bread. The warm evening wind blows gently with a saline breeze over a bowl of fresh fruit with khaki, tangerines, and peaches. The rye bread is freshly buttered and sprinkled with salt crystals from Trapani’s salt pans.
Palate
With a fine, sparkling mousse on the first sip, the palate delivers far more than the nose promises. The slightly oxidative note is complemented by roasted almonds and a touch of salted butter, as the sourdough bread has since been toasted and has a golden brown sheen. The reduced fruitiness is rich in extract, harmoniously blending the components of this initially unusual aromatic conglomerate. A touch of iodine, a stimulatingly tart phenolic note, and its fruity core, like the slim 11.5% ABV, make it a pleasure to pour more.
