Info

Maison Stephan stands for absolute low-intervention winemaking. No additives, pesticides, fungicides, filtration, or anything similar are used. The sulphur content is almost zero. L’Ultime is a blend of the estate’s four vineyards. Approximately 4.5 hectares are used for this, with a gradient of up to 40%. As is usual there, it is a cuvée of Syrah and Viognier. The Syrah is a Massale selection, also called Serine. The vineyards are up to 125 years old and produce an average yield of 17 hl/ha. The soil types vary between 87% Côte Blonde, which is based on leucogneiss, dark granite, and magnesium iron mica. The remaining 13% is Côte Brune, slate. After the harvest, the whole grapes undergo a cold maceration before they are mostly destemmed and processed. Fermentation is then carried out using the semi-carbonic method. Regular remontage and pigeage improve extraction. Natural sedimentation follows. Absolutely no additives or further steps. The wines then mature for 24 months in oak barrels from the Tronçais region.

Nose

L’Ultime delivers a very mysterious and profound nose, in a positive sense. There’s an incredible amount going on in a very subtle way. It is ferrous and bloody. It delivers fresh rosehip and also red fruit tea as well as rooibos. It is also earthy and spicy with a high floral intensity. Hibiscus and pansies clearly characterize this nose. Damp forest floor, topsoil, and pine bark fill the air. Black pepper, juniper, and allspice complement this spectacle very well. Nuances of licorice and cocoa butter can be detected, and a whole phalanx of dark fruity aromas buzz in the background. Pickled morello cherries, sweet cherries, elderberries, blackberries, blackberries, and plums are used generously but timidly.

Palate

The fruit is much more present on the first sip. It feels like a large gulp of elderberry juice, only with fine-pored tannins and racy acidity. It absolutely retains its bloody character. This is beguiling and immediately makes you thirst for more. Although its aromatics are densely woven, it moves lightly to its goal. The earthiness and spice come across in a very pleasant, slightly reduced form. However, a whole range of ethereal aromas gains the upper hand in the finish. For minutes, it has a Mediterranean, invigorating, and refreshing quality. The tannins coat the mouth perfectly. Together with the fruit, this creates a bittersweet moment that couldn’t be better.
