Info

Maison Stephan stands for absolute low-intervention winemaking. No additives, pesticides, fungicides, filtration, or anything similar are used. Sulfur is almost zero. The cuvée is based on 90% Syrah, supplemented with 10% Viognier. The vines are planted on 2 hectares of the Tupin and Côteau du Tupin vineyards. The gradient is 40%. The name Les Binardes comes from Napoleon’s vineyard register. Leucogneiss and quartz make up the soil formation. The vineyards vary in age from 15 to 40 years and produce yields of approximately 30 hl/ha. After the harvest, the whole grapes undergo cold maceration before they are mostly destemmed and processed. Fermentation then takes place using the semi-carbonic method. Regular remontage and pigeage improve extraction. This is followed by natural sedimentation. Absolutely no additives or further steps. The wine matures in cement tanks for twelve months before bottling.

Colour

Dense purple with slight cloudiness and violet inclusions.

Nose

2022 Les Binardes has a wonderfully spicy aroma. White and black pepper, juniper, and cinnamon envelop the dark fruit. Elderberry, blackberry, sweet cherry, and mulberry are intense and inviting. Licorice and dark chocolate complement both the fruit and the balsamic spice very well. A touch of black tea and fresh rosehip add another dimension. It seems very ferrous, sometimes bloody. The pure rock of its origin leaves earthy to cool associations. It reveals its Mediterranean side through garrigue, rosemary, thyme, and green olives.

Palate

With the first sip, it underlines my impressions. Its bloody, iron-rich character appears lean, taut, demanding, yet generous and inviting. The Syrah’s delicate fruit shines through in its purest form. However, its cool, silky qualities are much more dominant. The spice also comes through wonderfully in the mouth and on the finish. Licorice, white pepper, and juniper characterize it. The Mediterranean nuances also fully shine here. Its stony, mineral structure, paired with its wild notes, is very beguiling and animating. Les Binardes is sexy, with elements of classicism and the wildness of natural wines.
