Nose
In its youth, the nose is reserved and still clearly characterized by yeast and fermentation. This then develops into apple and almond blossom, as well as some acacia. Chopped almond and yeast nuances then directly underline this. Butterscotch and yeast plait. Light fruits appear very timidly: pear, quince, and apple. A hint of lemon zest and candied ginger. Nettle, lemon balm, and chervil have a very subtle effect, but their freshness is all the more invigorating.
Palate
An invigorating, crisp, and refreshing sip of wine. It fluctuates between tart and acidic. It clearly reminds me of chewing the skins of red apples. Here, too, the herbal aromas are invigorating and refreshing, albeit subtly, and underscore the wine’s subtle tannins. For a Pinot Gris, it’s even quite advanced in its astringent acidity. This makes it incredibly juicy and easy to drink. The floral aromas then reappear in the finish.
