Wine Information

For these three wines (blanc #1, blanc & Sauvignon, and rouge #1), Johannes Zillinger selects the coolest plots of the oldest vineyards: those near the forest, facing north and northeast, and those on windy slopes, all growing on limestone-sandstone soils. Parcellaire blanc & sauvignon is a blend of 62% Pinot Blanc and 38% Sauvignon Blanc. The grapes were harvested by hand on September 15, 2021. The Pinot Blanc was spontaneously pressed as whole bunches in kvevri, where it initially fermented for six days and then further fermented in large wooden barrels. The Chardonnay was spontaneously pressed as whole bunches and fermented spontaneously in used 500-liter tonneaux. The wine was aged for 12 months on the lees in 1,000- and 500-liter barrels. The total sulphur content is 30 mg/L, the pH is 3.1, and the residual sugar is 3 grams.

Medium straw yellow

Nose

This cuvée of Pinot Blanc and Sauvignon Blanc smells of verbena and lemon peel, a touch of salty lemon with notes of white currants, some unripe pineapple, celery leaves, and rock. There is also a hint of saffron and green herbs.

Palate

On the palate, the cuvée is juicy and silky. The initial taste is rounder and creamier than the taut nose would suggest. But after a few moments, the taut citrus notes, along with the accompanying slenderness and coolness, become increasingly apparent on the palate. Towards the finish, this is a highly agile, vibrantly fresh, slightly tart, mouthwatering wine with bright fruit, zesty piquancy, salty minerality and a chalky texture that offers a very subtle resistance.
