Information about the wine

The idea of an everyday wine, far removed from the mainstream. A cuvée of Cabernet Franc, Merlot, and Roesler. After hand-picking, the Roesler was pressed as a whole grape. The Roesler dates from 2018 to 2021, was briefly fermented on the skins, and aged in old barrels. The Merlot was fermented whole-berry and, after fermentation, aged in 500-liter oak and stainless steel barrels. The Cabernet dates from 2019 to 2021. After a brief fermentation in open vats, it was also aged in 500-liter oak and stainless steel barrels. Bottling took place in February 2024 with 25 mg total sulfur, 3.32 pH, and 0.7 grams of residual sugar.

Colour

Medium, slightly transparent ruby red

Nose

The aroma of Johannes Zillinger’s red solera is still restrained and youthful. It is reminiscent of blackberries, a touch of beetroot with corresponding earthy notes, dark cherries, strawflowers, bay leaves, and rock.

Palate

The youthfulness is confirmed on the palate in the form of a taut, fresh, cool, and tart overall impression, which combines with a subtly yeasty and silky texture. The wine exudes joie de vivre with its agile acidity and juicy dark berry fruit. The tannins are fine and grippy, the wine subtly herbal and spicy, and again pleasantly tart in the finish. This is precisely where the Cabernet Franc component is particularly present.
