Wine Information

Jean Servagnat’s Les Galipes de Coulommes champagne is a blend of 65% Meunier, 25% Chardonnay, and 10% Pinot Noir from grapes from the village of Coulommes la Montagne in the far north of the Montagne de Reims. The name “Galipe” comes from a local idiom meaning “vineyard.” A clayey-limestone terroir is typical here. Around 60% of the grapes were from the 2018 harvest, the remaining 40% came from reserve wines; fermentation was spontaneous, namely malolactic fermentation. Tirage took place in April 2018. This batch was disgorged on July 25, 2022. The dosage is 1.7 g/l.

Colour

Intense straw yellow with a fine mousse.

Nose

The aroma of this champagne already possesses everything one appreciates in a good winemaker’s champagne. There are scents of white blossoms, ripe lemons, kumquats with their peel, lemon cream, and some white-fleshed stone fruit. Added to this are jasmine, white nougat, and warm pastries with a hint of sweetness and roasted nuts. Everything appears lively and fresh, yet elegant and pleasantly ripe.

Palate

The palate continues seamlessly. The champagne has so much fullness that it completely fills the mouth. Other champagnes achieve this by effervescent on the palate, but not Les Galipes de Coulommes. Its mousse is fine, but not too fine, so you can feel it pleasantly as you engage with the juicy citrus and spicy fruit. The aromatic richness is balanced by a lively acidity. On the palate, the champagne appears even fresher than on the nose, but combines this with sensually ripe fruit and notes of puff pastry. It all comes together seamlessly, and when all this comes together, the bottle is emptied very quickly, especially since there’s a generous dose of salted lemon in the finish that immediately makes you want another glass.
