For Salvo Foti, Etna wine is a “human wine”: Due to the small size of the plots and the cultivation method, mechanical processing is not possible. The cultural landscape needs human input to reflect its uniqueness. To this end, Salvo Foti founded I Vigneri, based on the winegrowers’ association “Maestranza dei Vigneri” from 1435. The association of around 35 men is responsible for everything related to viticulture in the broadest sense: from the recultivation of old land and the planting of new vines to the construction and maintenance of the Muretto Assecco, the typical dry-stone walls. I Vigneri prove that craftsmanship and tradition not only have a future, but also represent an intangible value that creates identity. The I Vigneri Etna Rosso is a forbidden wine. Its production according to ancient methods in Palmero exempts it from classification as an Etna DOP and relegates it to the lower ranks as a non-classified Vino Rosso. It is vinified without any temperature control or aging in wooden barrels and is racked and bottled according to the phases of the moon. The I Vigneri Etna Rosso is made from 90% Nerello Mascalese and 10% Nerello Cappuccio. The vines for this wine grow in the Alberello Etneo and are an average age of 20 years. The average vine density is 7,500. The harvest begins in the first or second week of October with strict manual selection of the grapes in the vineyard. No destemming, first pressing with the feet, and maceration with the skins and stems lasts about eight days. Spontaneous fermentation also lasts about eight to ten days. The wine then ages underground in terracotta amphorae for six months before receiving minimal sulphur before bottling.

Nose

The 2022 I Vigneri Rosso, I Vigneri di Salvo Foti, welcomes you with almost Bacchic generosity and exudes its rich, fruity fragrance: dark, concentrated, black berries accumulate with deep red stone fruit; black cherries collide with mulberries, and raspberry confit is counteracted by a distinct core note of sloe or wild service berry. There is no mercy here, but rather a full-bore cascade of fruit. The whole is so wonderfully calm and tranquil, grounded in ethereal and balsamic notes reminiscent of sandalwood, undergrowth, and dark tobacco. Black pepper, allspice, and juniper are framed by wreaths of rosemary.

Palate

Thanks to the highly oxidative processing in the Palmento, the funk plays on the first sip, as the volatile notes ring on the soft palate. The rich fruit flows leisurely from the bowl like liquid honey from a honeycomb, the dark fruit of the nose reflects on the palate. The plush, soft tannins are highly floral, the acidity sings in duet on the palate, lending the generous presentation the necessary verve, lightness, and backbone. Juicy, winey, velvety, and wonderfully old-school. Excellent with wintery, spicy cuisine.
