Information
The Saint-Romain Combe Bazin comes from the vineyard of the same name in the southeastern part of the appellation, towards Auxey-Duresses. Combe Bazin also faces southeast and lies at an altitude of 360 meters. The vineyard has white limestone soil, the so-called Calcosol sur Marne de Saint-Romain, and is planted with 30-year-old vines. After hand-harvesting, partial destemming and spontaneous fermentation took place in stainless steel tanks, followed by a mixture of pigeage and remontage, i.e., under-punching and overflowing of the pomace cap. Malolactic fermentation took place spontaneously in the barrels. Aging lasted for ten to twelve months in a mixture of 228-, 350-, and 500-liter barriques and tonneaux, of which no more than 10% are replaced annually. The wine was tasted daily, and the barrels were racked whenever Frédéric Buisson deemed it appropriate. It was fined with bentonite and filtered very coarsely. Sulfur was added only during bottling, with a maximum of 40 to 50 mg/l of total sulfite.

Nose
The Saint-Romain Combe Bazin 2021 is a floral wine reminiscent of rose petals and wild roses. There are also notes of sweet and sour cherries and some blood orange zest. Beneath this, there is some undergrowth and blond tobacco. The result is elegant and transparent.
Palate
On the palate, the Saint-Romain displays a similar transparency between flowers, especially red fruits, and undergrowth, with tannins that are still somewhat rough and a lively acidity. The Pinot Noir is linear and fresh on the palate, with a touch of warmth but also some tart notes on the finish. It still needs a little time to find its footing.

The 2021 Saint-Romain Combe Bazin is taut and chalky, revealing aromas of raspberries and cranberries followed by a medium-bodied, saline palate underpinned by a tangy spine of acidity. It’s a bright, racy wine from this stony south-facing site.
Saint-Romain’s reference point, this 19-hectare domaine has been estate bottling since the late 1940s and farming organically since the 1970s. Today, brothers Franck and Frédérick Buisson preside over the vineyards and cellar, where white grapes are sorted, crushed and pressed for two and a half hours and musts are barreled down with minimal settling. Reds see gentle extraction, generally with some 50% whole bunches, though that proportion was somewhat reduced in 2021 given the vintage conditions. The result is elegantly textural, chiseled wines that can age very well but are also hard to resist young. After a series of sunny vintages, where Saint-Romain’s altitude helped to retain freshness, don’t count out the 2021s, a more challenging year that has nevertheless produced some beautifully electric, saline whites and perfumed, supple reds.
