Information
The Saint-Romain Perrière 2022 comes from the vineyard of the same name near the village. The 40-year-old, east-facing vines are located at an altitude of 320 to 350 meters on a hill facing the Saint-Romain valley. The strong presence of limestone (Colluviol sur Calcaire) gives the Climat its name. The grapes are hand-picked, whole-bunch pressed, and fermented spontaneously in wood. Malolactic fermentation takes place spontaneously in the barrels. Aging lasts for ten to twelve months in a mix of 228-, 350-, and 500-liter barriques and tonneaux, concrete eggs, and WineGlobes, with a maximum of 10% new wood. The wine is tasted daily, and the barrels are racked when Frédéric Buisson deems it appropriate. It is fined with bentonite and only very coarsely filtered. Sulfur is added during bottling, with a maximum of 40 to 50 mg/l total sulfite. The winery is now Biodyvin-certified.

Nose
The Saint-Romain Perrière 2022 has a pleasantly reductive effect. There are no sharp sulphur flecks, aka popping flakes, but rather a subtle kind of smokiness that combines primarily with the white-fleshed fruit. Pears, greengage, a touch of pineapple, and a few dashes of lime are among the notes here. There’s also a touch of rock and petrichor, as well as a hint of patisserie.
Palate
On the palate, you can detect the use of wood, which provides spice and contributes to the complexity. Here, too, notes of green and yellow pears, along with citrus peel and a hint of pineapple, are evident. A touch of yeast also lends a creamy character to this otherwise fresh, juicy, and very straight Saint-Romain.
