Wine Information
This Chablis is made from more than 15 hectares of vineyards around the towns of Chablis, La Chapelle, and Beine. The soils are chalky with Kimmerdige and Portlandian limestone, and the grapes are harvested by hand. After harvesting, the grapes are pressed directly, and the must ferments spontaneously in stainless steel fermenters. The Chablis is aged in traditional, multi-year-old wooden barrels. After aging, it is lightly filtered and sulfurized.
Colour
Bright lemon yellow
Nose
At first glance, this Chablis might be mistaken for a Sancerre in your glass. It smells of lemons, limes, cassis, and freshly cut grass. Accompanying notes are lemon tart, a hint of mint, almond, and chalk.
Palate
On the palate, the Chablis has a fine acidity and equally delicate creaminess. Alongside herbal and citrus notes, there are crisp stone fruit and a polished, slightly chalky texture.
