Product description for de l’Enclos Chablis 1er Cru Vau de Vey AOC 2023 Driving from Chablis via Poinchy to Beines, you pass the Premier Cru Vau de Vay vineyard in a side valley. It lies east-facing on the left bank of the Serein stream. This long, steep vineyard covers 40.57 hectares. While pure Kimmeridge limestone and marl predominate on the right bank of the stream, here it is Argilo-Calcaire, a calcareous clay with loam. The wines from the left bank are somewhat more floral and lighter than those from the right bank. The Bouchards own 2.77 hectares in this vineyard, which were planted in 1979. The harvest took place between September 21 and 22, 2023. Fermentation was spontaneous, and the wine aged for 13 months in stainless steel (1/2) and used tonneaux (1/2) on the fine lees. The wine was coarsely filtered and lightly sulfurized. The total sulphur content is 52 mg/l.

Colour

Medium straw yellow

Nose

A powerful, intense 1er Cru reminiscent of lemon juice, pips, and peel, as well as hay, white blossoms, and some moist lichen on wet stone. There is also a hint of smoke, flint, and green apple.

Palate

On the palate, the Vau de Vey appears juicy and both powerful and firm, as well as creamy. The balance of bright, ripe fruit, powerful acidity, light tannins and phenolics, barely noticeable wood, and the slightly creamy texture is very successful. The Chablis appears deep and fresh with plenty of juice and salt. A Chablis Premier Cru par excellence, mouthwatering and lively.
