Product description for Corzano e Paterno “I Tre Borri” IGT 2020 (bio)The I Tre Borri from Corzano e Paterno is a blend of 90% Sangiovese and 10% Canaiolo. The grapes are harvested by hand and fermented separately according to grape variety and vineyard. In top vintages, up to 5% of stalks are fermented. Fermentation takes place spontaneously with the grapes’ own yeasts in small 1-ton tanks and open fermenters. Maceration lasts 21 to 35 days, depending on grape quality, site, and soil. Extraction is performed by gentle submersion of the pomace cap, rarely by pumping over. Malolactic fermentation takes place partly in wood and partly in steel, before the wines age for about a year in large barrels (25–40 hl) and partly in used barriques and tonneaux. It is produced only in the best years.

Colour

Ruby red with violet reflections, bright and clear.

Nose

The 2020 I Tre Borri Sangiovese delivers a noble understatement on the nose. The rich sour cherry sparkles ruby red in the goblet and is accompanied by Tuscan maquis and wild herbs such as bay leaves, thyme, and rosemary. Spicy notes of juniper, sandalwood, and black olives complete the picture.

Palate

The 2020 I Tre Borri combines the aromas of cherry with Tuscan maquis. Aromatically profound and carried by a broad acidity, it offers not only length but also a rapid pace. The rich fruit is edged by delicate tannins, which add additional depth with noble bitterness. With an ethereal finish and a fruity, long aftertaste, it impresses as an expressive Sangiovese.
