The Clos du Moulin aux Moines winery is housed in an old Cistercian monastery and boasts over 1,000 years of history. It lies in the heart of the Côtes de Beaune, between Meursault, Puligny-Montrachet, and Chassagne-Montrachet. Under the direction of Willy Roulande, the Domaine Clos du Moulin aux Moines cultivates vineyards in Pommard, Monthelie, and Auxey-Duresses according to biodynamic principles. The primary objective is to bring the quality from an intact ecosystem into the cellar and then into the bottle as gently as possible. All work in the 15 hectares of vineyards is done by hand, with horses instead of machines. The vines are on average around 40 years old, and yields are relatively low at just over 30 hectoliters. In the cellar, the musts are carefully aged in large containers, as the trend is increasingly moving away from small barriques in order to express the delicate character of the wines as unvarnished as possible. The wines are fermented spontaneously with their own yeasts in concrete and then aged with the smallest possible proportion of new wood (10–15%). Wines with transparent fruit and delicate vibrations define the domaine’s style. The “Clos de la Perrière” is located in the village of Corpeau, south of Puligny-Montrachet and Chassagne-Montrachet. The soils consist of sandy-silty limestone, whose southerly exposure allows for early ripening. With a total area of three hectares, the clos is surrounded by an old stone wall that protects Pinot Noir, Chardonnay, and Aligoté. The wines from the monopoly site are classified as “Bourgogne.” The grapes from the 1972 and 1979 planting years are harvested by hand and sorted in the vineyard. They are then slowly pressed to allow the must to oxidize gently. Slow, spontaneous fermentation takes place in a large wooden tank, in which the wine then matures for ten months without stirring or decanting, before being bottled unfined and unfiltered with only a small amount of SO₂.

Nose
A kaleidoscope of aromas unfolds on the nose of the 2022 Clos de la Perrière blanc from Clos du Moulin aux Moines: Beginning with a citrus burst, it combines the oils of grapefruit, green mandarin, and cedar with orange blossoms and dried limes. Wet blackboard chalk and dried hay flowers are given a balsamic base by notes of linseed oil and hazelnut shells, crème noisette in a croissant, and dried quince. Complex and multi-layered with a clearly low SO₂ content.
Palate
Creamy on the palate with notes of licorice and more crème noisette, it is then disciplined by its distinctive minerality, which captures its expansive character and forces it into a corset. The wine is rather soft in character, with a generous nature and expansive aromas: licorice, a touch of anise, chervil, and tarragon flavour the rich extract, while the delicately salty minerality immediately grounds it. A spicy-tart character with a distinctive, long finish.
