Information about the wine
The neighboring Hildenbrandseck manor, formerly part of the Idig estate, gave the castle its name. The site borders the Meerspinne (Sea Spider) to the north. The gentle slope to the east tilts slightly to the north. The influence of the cold air from the Gimmeldinger Valley is significantly reduced here, but still noticeable. The soil consists of a mixture of limestone loess from the Meerspinne (Sea Spider) and red sandstone scree. The vineyard was converted to Pinot Noir in 2017. Two years later, the vines had sufficient time to grow together, resulting in beautiful Pinot Noir grapes.
Information about the winemaking
The grapes are harvested under strict selection, selecting only fully ripe, healthy berries at the optimal time. Yields here are typically only 25-30 hl/ha, allowing the grapes to achieve optimal flavor. The berries, carefully transported to the winery as whole bunches, are partially destemmed. Approximately 30% to 50% of the grapes remain unstemmed and ferment as whole clusters. This gives the wine a herbal, fine tannin. During the cold maceration of 5 days at 12°C, careful daily bubbling releases particular color from the berries. This is followed by fermentation on the skins for two weeks, which peaks at 30°C. Bubbling and punching down twice a day releases a lot of flavor from the berry skins. The wine is then aged for 18 months in barriques, usually 10% new wood, the rest used. This is followed by tasting and blending of the barrels. The wine then usually spends about 3 months in stainless steel for final maturation.

Muted garnet red with lightening towards the rim.
Nose
The 2020 Gimmeldinger Schlössel Spätburgunder VDP.Erste Lage presents itself as precise, cool, and elegant with dark fruit reminiscent of sour cherries, sloe, cranberries, wild raspberries, and a hint of cassis. Wild mint, red fruit, and a hint of cinnamon complement this beautiful aroma with exquisite finesse. This wine floats out of the glass, delicate and beguiling.
Palate
Precise and fresh, this masterpiece glides over the tongue, characterized by a chalky note, salty hints, and a delicate fruit sweetness that further underscores its feminine style. A great seducer with silky tannins, it is already a great pleasure on its own and loves dishes with fruity and earthy influences. This wine practically dances, ushering in a whole new era in German Spätburgunder.
